Description

A creamy, flavorful one-pot meal that marries the richness of Alfredo sauce with the bold spices of Cajun cuisine, perfect for weeknight dinners.


Ingredients

  • 1 pound boneless, skinless chicken breasts (or thighs for extra juiciness)
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. In a large pot or skillet, heat olive oil over medium heat; add the chicken and cook until browned on both sides (about 6-7 minutes). Remove and let it rest.
  3. Add the orzo to the same pot and toast for about 2 minutes while stirring.
  4. Pour in the chicken broth and bring to a simmer; add garlic powder and return the chicken to the pot.
  5. Cover the pot and cook for about 10-12 minutes, or until orzo is tender and chicken is cooked through.
  6. Reduce heat, stir in heavy cream and Parmesan cheese; cook for an additional 2-3 minutes until sauce thickens.
  7. Slice the chicken, stir it back in, and adjust seasoning if necessary.

Notes

For a lighter option, substitute heavy cream with half-and-half or a non-dairy alternative. Additional veggies can be included for added nutrition.
