Ingredients
- 1 pound boneless, skinless chicken breasts (or thighs for extra juiciness)
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- In a large pot or skillet, heat olive oil over medium heat; add the chicken and cook until browned on both sides (about 6-7 minutes). Remove and let it rest.
- Add the orzo to the same pot and toast for about 2 minutes while stirring.
- Pour in the chicken broth and bring to a simmer; add garlic powder and return the chicken to the pot.
- Cover the pot and cook for about 10-12 minutes, or until orzo is tender and chicken is cooked through.
- Reduce heat, stir in heavy cream and Parmesan cheese; cook for an additional 2-3 minutes until sauce thickens.
- Slice the chicken, stir it back in, and adjust seasoning if necessary.
Notes
For a lighter option, substitute heavy cream with half-and-half or a non-dairy alternative. Additional veggies can be included for added nutrition.
