Description

A comforting and delicious vegetable lasagna packed with layers of tender pasta, creamy cheeses, and fresh vegetables.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchinis, sliced
  • 1 cup mushrooms, sliced
  • 3 cups spinach, roughly chopped
  • 1 jar marinara sauce
  • 3 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Italian seasoning to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft and fragrant.
  4. Toss in the zucchini and mushrooms, cooking until tender. Stir in the spinach until it wilts down beautifully. Season with salt, pepper, and a sprinkle of Italian seasoning.
  5. In a baking dish, spread a layer of marinara sauce on the bottom. Next, layer with noodles, a generous scoop of ricotta cheese, the sautéed vegetable mixture, and a sprinkle of mozzarella cheese.
  6. Repeat the layers until all your ingredients are happily stacked, finishing with a layer of noodles topped with remaining sauce and a glorious blanket of mozzarella and Parmesan cheese.
  7. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbling and slightly golden.
  8. Let it cool for a few minutes before slicing and serving.

Notes

For a creamier texture, consider mixing in some cottage cheese with your ricotta. You can also lighten it up by using turkey or chicken sausage in place of some cheese.
