Description
A comforting and delicious vegetable lasagna packed with layers of tender pasta, creamy cheeses, and fresh vegetables.
Ingredients
- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchinis, sliced
- 1 cup mushrooms, sliced
- 3 cups spinach, roughly chopped
- 1 jar marinara sauce
- 3 cups ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft and fragrant.
- Toss in the zucchini and mushrooms, cooking until tender. Stir in the spinach until it wilts down beautifully. Season with salt, pepper, and a sprinkle of Italian seasoning.
- In a baking dish, spread a layer of marinara sauce on the bottom. Next, layer with noodles, a generous scoop of ricotta cheese, the sautéed vegetable mixture, and a sprinkle of mozzarella cheese.
- Repeat the layers until all your ingredients are happily stacked, finishing with a layer of noodles topped with remaining sauce and a glorious blanket of mozzarella and Parmesan cheese.
- Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbling and slightly golden.
- Let it cool for a few minutes before slicing and serving.
Notes
For a creamier texture, consider mixing in some cottage cheese with your ricotta. You can also lighten it up by using turkey or chicken sausage in place of some cheese.
