Ingredients
- 1 cup flour

- 2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp oil
Instructions
- Mix the dry ingredients—flour, sugar, baking powder, and salt—in a bowl.
- In a separate bowl, beat the egg, milk, and oil together until well combined. Pour this mixture into the bowl of dry ingredients.
- Stir just until combined; it’s perfectly fine if the batter is slightly lumpy.
- Heat a lightly greased skillet over medium heat and cook the pancakes for about 2 minutes on each side, or until they turn a lovely golden brown.
- Serve with maple syrup, butter, or toppings of your choice.
Notes
For added flavor, try mixing in vanilla extract or chocolate chips. Store leftovers in an airtight container for 2-3 days, or freeze for up to a month.
