Description

This delightful banana bread is made sugar-free with mashed bananas and applesauce, resulting in a moist loaf perfect for breakfast or a snack.


Ingredients

  • 3 very ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted unsalted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups whole wheat flour (or all-purpose flour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. Combine the mashed bananas, applesauce, melted butter or oil, eggs, and vanilla extract in a large bowl. Mix until just combined.
  3. Whisk together the flour, baking soda, cinnamon, and salt in a separate medium bowl.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just incorporated. Do not overmix. If you’re using nuts, fold them in gently.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Make sure to use very ripe bananas for maximum sweetness. For a dairy-free version, use coconut oil instead of butter. Consider adding chocolate chips or dried fruit for variations.
