Description
A delightful loaf merging the sweetness of bananas with the tartness of blueberries, perfect for snacks or breakfast.
Ingredients
- 2 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup sugar (or honey/maple syrup for a natural sweetener)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 1/2 cups white whole wheat flour
- 1 cup blueberries
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil into the mashed bananas.
- Mix in the sugar, egg, and vanilla extract until everything is well combined.
- Sprinkle the baking soda and salt over the mixture and stir them in.
- Add the flour and mix gently until just combined. Be careful not to over-mix!
- Fold in the blueberries and cinnamon.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Use overripe bananas for natural sweetness and moisture. Store leftovers in an airtight container for up to 3 days.
