Ingredients
- 2 cups cooked quinoa
- 1 lb chicken breast, cooked and cubed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 1 bell pepper, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- For tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated)
- 1 clove garlic (minced)
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a large bowl, mix the cooked quinoa, chicken, cucumber, cherry tomatoes, red onion, bell pepper, olives, and feta cheese.
- Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss to combine.
- For the tzatziki sauce, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl. Stir well.
- Serve the chicken bowl topped with tzatziki sauce.
