Ingredients

  • 2 cups cooked quinoa
  • 1 lb chicken breast, cooked and cubed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, sliced
  • 1 bell pepper, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • For tzatziki sauce:
  • 1 cup Greek yogurt
  • 1 cucumber (grated)
  • 1 clove garlic (minced)
  • 1 tablespoon lemon juice
  • Salt to taste


Instructions

  1. In a large bowl, mix the cooked quinoa, chicken, cucumber, cherry tomatoes, red onion, bell pepper, olives, and feta cheese.
