Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup gluten-free all-purpose flour
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined with the bananas.
- Mix in the baking soda and salt until just incorporated.
- Add the sugar, beaten egg, and vanilla extract, blending thoroughly.
- Fold in the gluten-free flour until just combined—avoid overmixing for the best texture.
- If desired, fold in the chocolate chips and walnuts for some extra flavor.
- Pour the batter into the greased loaf pan, smoothing down the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Make sure the bananas are really ripe for the best flavor. Don’t overmix the batter to ensure a light and fluffy loaf. Experiment with different spices for added warmth.
