Description

A cozy and delicious gluten-free banana bread recipe, perfect for breakfast or dessert, made with ripe bananas and optionally enhanced with chocolate chips or walnuts.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined with the bananas.
  4. Mix in the baking soda and salt until just incorporated.
  5. Add the sugar, beaten egg, and vanilla extract, blending thoroughly.
  6. Fold in the gluten-free flour until just combined—avoid overmixing for the best texture.
  7. If desired, fold in the chocolate chips and walnuts for some extra flavor.
  8. Pour the batter into the greased loaf pan, smoothing down the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes
