A delightful gluten-free banana bread recipe that’s moist, easy to make, and perfect for breakfast or snacks.
Ingredients
- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 1/2 cups gluten-free all-purpose flour
- Optional: chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Mash the ripe bananas until smooth.
- Stir in the melted coconut oil, sugar, egg, and vanilla extract until well combined.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the gluten-free flour and stir until just combined. Be careful not to overmix!
- Fold in the chocolate chips if using.
- Pour the batter into a greased loaf pan, spreading it evenly.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool before slicing, and serve with a smile!
Notes
