Ingredients
- ¾ lb bacon (about 12 slices)
- 4 eggs
- 1 cup diced red potatoes
- ½ cup chopped green peppers
- ¼ cup shredded cheddar cheese
- Fresh parsley
- Salt and pepper to taste
Instructions
- Cut bacon into 1-inch pieces and cook in a skillet over medium heat for 5-7 minutes until crispy.
- Drain off half the fat and return the skillet to heat.
- Add diced red potatoes and chopped green peppers; cook for 8-10 minutes until golden brown.
- Transfer the mixture to a bowl and set aside.
- Crack eggs into the skillet and cook for about 1 minute until the whites have set.
- Spoon the bacon, potato, and pepper mixture around the eggs, sprinkle with cheddar, and cook for another minute.
- Season with salt and pepper, garnish with parsley, and serve hot.
