A delightful dessert roll filled with rich coffee flavors and creamy goodness, perfect for any occasion.
Ingredients
- 4 large eggs
- 100g granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup brewed coffee, cooled
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tbsp instant coffee granules (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a 10×15 inch baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar together until pale and fluffy.
- Gradually add the vegetable oil and cooled brewed coffee, mixing until well combined.
- Sift in the flour, baking powder, and salt, folding gently until the mixture is smooth.
- Pour the batter into the prepared baking sheet, spreading it evenly.
- Bake for 12-15 minutes or until the edges are lightly golden and the center springs back when touched.
- Turn the cake out onto a clean kitchen towel dusted with powdered sugar.
- Peel off the parchment and roll the cake up gently with the towel while it’s hot. Let it cool completely in this shape.
- For the filling, beat together the heavy cream, powdered sugar, and optional instant coffee until soft peaks form.
- Once cooled, unroll the cake, spread the coffee whipped cream on top, and re-roll it.
- Chill for at least 30 minutes before slicing and serving.
Notes
Dust with powdered sugar or drizzle with chocolate sauce for serving. Fresh berries can elevate the presentation.
