Delicious, bite-sized pancake poppers that are fluffy and perfect for any breakfast or brunch occasion. Quick and easy to make!
Ingredients
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F and grease a mini muffin pan.
- In a bowl, mix together flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract until well combined.
- Gently combine the wet and dry ingredients, being careful not to overmix. A few lumps are okay!
- Scoop the batter into your mini muffin pan, filling each cup about 2/3 full to allow for rising.
- Bake for 10–12 minutes, or until golden brown and a toothpick comes out clean.
- Cool slightly before serving warm with syrup drizzled over the top.
Notes
These pancake poppers can be served with whipped cream, fresh fruit, or yogurt. They freeze well for later enjoyment.
