A delightful and moist blueberry banana bread that’s easy to prepare and perfect as a breakfast or snack.
Ingredients
- 3 ripe bananas, mashed
- 1 cup almond flour
- 1/2 cup rolled oats
- 2 eggs
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup honey or maple syrup
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mix the mashed bananas, eggs, honey (or maple syrup), and vanilla extract until well combined in a large bowl.
- Combine almond flour, rolled oats, baking soda, and salt in another bowl.
- Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
- Fold in the blueberries gently to avoid crushing them.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serve as a delicious guilt-free treat.
Notes
Using the ripest bananas available will yield sweeter bread. Frozen blueberries can be used; fold them in gently.
