Description

Delicious skirt steak tacos wrapped in soft tortillas, topped with fresh veggies for a smoky, flavorful meal.

Ingredients

  • 1 lb skirt steak
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper (to taste)
  • 8 small corn or flour tortillas
  • 1 small onion (finely chopped)
  • 1 bunch fresh cilantro (chopped)
  • Lime wedges (for serving)

Instructions

  1. In a bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper. Add the skirt steak, ensuring it’s well-coated. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight.
  2. Heat a grill or pan over medium-high heat. Remove the steak from the marinade, letting any excess drip off. Cook the steak for about 3-4 minutes per side for medium-rare, adjusting the time based on thickness. Once cooked, let it rest for a few minutes.
  3. Thinly slice the steak against the grain for tender pieces.
  4. Warm the tortillas on a pan or grill for about 30 seconds on each side. Assemble your tacos by placing slices of skirt steak on the tortillas, adding chopped onion and fresh cilantro.
  5. Serve your tacos with lime wedges on the side.

Notes

If you can’t find skirt steak, flank steak is a great substitute. Don’t skip the marinating step for best flavor.
