Description
Delicious skirt steak tacos wrapped in soft tortillas, topped with fresh veggies for a smoky, flavorful meal.
Ingredients
- 1 lb skirt steak
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 2 tbsp lime juice
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper (to taste)
- 8 small corn or flour tortillas
- 1 small onion (finely chopped)
- 1 bunch fresh cilantro (chopped)
- Lime wedges (for serving)
Instructions
- In a bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper. Add the skirt steak, ensuring it’s well-coated. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight.
- Heat a grill or pan over medium-high heat. Remove the steak from the marinade, letting any excess drip off. Cook the steak for about 3-4 minutes per side for medium-rare, adjusting the time based on thickness. Once cooked, let it rest for a few minutes.
- Thinly slice the steak against the grain for tender pieces.
- Warm the tortillas on a pan or grill for about 30 seconds on each side. Assemble your tacos by placing slices of skirt steak on the tortillas, adding chopped onion and fresh cilantro.
- Serve your tacos with lime wedges on the side.
Notes
If you can’t find skirt steak, flank steak is a great substitute. Don’t skip the marinating step for best flavor.
