Description

A low-carb twist on a classic favorite featuring ground beef, melted provolone, and colorful bell peppers wrapped in tortillas.


Ingredients

  • 1 lb ground beef
  • 1 cup sliced bell peppers (any color)
  • 8 oz provolone cheese, sliced
  • 4 low-carb tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. In a skillet, heat olive oil over medium heat and add ground beef. Cook until browned.
  2. Add sliced bell peppers and cook until softened.
  3. Season with salt and pepper to taste.
  4. Remove from heat and stir in provolone cheese until melted and gooey.
  5. Lay the low-carb tortillas flat and spoon the beef mixture onto each.
  6. Roll up the tortillas tightly.
  7. Serve warm and enjoy!
