Description

A delicious fusion of a classic grilled cheese sandwich and a hearty burrito, perfect for weeknights or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas
  • Butter or oil for grilling


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease, then stir in the taco seasoning along with 1/4 cup of water and let it simmer for about 5 minutes until fragrant.
  2. Warm the tortillas in a dry skillet or briefly in the microwave just until they’re pliable.
  3. On each warm tortilla, spread a layer of cooked rice, top with the seasoned beef, drizzle on some nacho cheese and chipotle sauce, add a dollop of sour cream, then sprinkle on the cheddar and mozzarella cheeses.
  4. In a clean skillet, sprinkle 2 tablespoons of shredded cheese on one side. Carefully place the burrito seam-side down in the skillet, cooking until the cheese is crispy and golden. Flip and repeat for the other side.
  5. Enjoy your Grilled Cheese Burrito with guacamole, salsa, or a fresh salad. Store leftovers in an airtight container in the fridge or tightly wrapped and frozen for up to a month.

Notes

For a vegetarian option, swap the beef for ground turkey or black beans. Add diced jalapeños for extra heat!
